Introduction
The present day Filipino is the product of both East and West, reflecting Malay and Chinese influence followed by 300 years of Spanish, then American rule. The merging of different cultures brought forth many changes in the Philippines, influencing not only traditions and art but also culinary practices.
Fusion technique in cooking existed in the Filipino kitchen long before Ferdinand Magellan discovered the Philippines in 1521. While 'fusionâ? has been popularised by modern chefs and dubbed by some as 'East Meets West,â? the original concept was adopted by Filipinos as a result of migration and colonisation.
Thus, the different dishes presented in this menu reflect the blending of cultures. Here you will find the best of Oriental and Western cuisine in dishes which have become distinctly Filipino.
The Banaue Rice Terraces are 2,000-year-old terraces that were carved into the mountains of Ifugao by ancestors of the indigenous people. The Rice Terraces are commonly referred to as the 'Eighth Wonder of the Worldâ?. Located approximately 1,500 metres above sea level, they are fed by an ancient irrigation system from the rainforests above the terraces.
The Banaue Terraces are part of the Terraces of the Philippine Cordilleras, ancient sprawling man-made structures from 2,000 to 6,000 years old. They are found in the provinces of Kalinga, Apayao, Benguet, Mountain Province and Ifugao, and are a UNESCO World Heritage Site.
Rice Terraces is now serving a large range of Filipino thirst-quenchers. Come have your fill of Philippine beers, rums or G.S.M. Blue!
