Introduction
Situated on the ground floor in the heart of Edinburgh's old town, Pancho Villa's is ideally suited to tourists, locals, students - and any stray Scottish MPs who have escaped the modern muted tunes of the new Scottish parliament for a bit of Mexican colour!
The interior of Pancho Villa's is decorated in the bright colours typical of the architecture of Valle de Bravo, México state, Mayra's home town.
At Pancho Villa, we pride ourselves on creating fresh, authentic Mexican dishes with a modern twist. In Mexico, food preparation can take all day, so to be a chef at Pancho Villa is no 'paseo in the parque'- our chefs are in at the crack of dawn, mashing avocados for guacamole, chopping chillies ' we use over twelve different chillies in our dishes - and squeezing loads of fresh Mexican limes for making Margaritas
