Introduction
Primorski was opened by Buba Khotoveli in 1981. Primorski is one of the original restaurants & nightclubs on Brighton Beach. Buba is a Georgian Jew so naturally many of Primorski's food is ethnic Georgian-Jewish Cuisine. Ethnic Georgian dishes include Khachapuri (Patty with mixed Cheeses), Khinkali (Georgian Dumplings), Lobio (Fried Red Beans with Walnuts), our Georgian Bread "Lavash" made fresh on our premises, just to name a few. Ethnic Jewish dishes include our New York Times acclaimed Gefilte Fish, Herring with Onions, and Dumplings.
When Primorski first opened it seated 75 people. Buba took a very hands on approach to running his restaurant. Buba spent hours in the kitchen preparing his ethnic Georgian dishes. All of Primorski's dishes have a home cooked touch to this day.
Primorski became a famous hangout for Americans that wanted to get a taste of the Georgian and Russian culture. People love to come to Primorski for our great food, music, and dancing. With the success of Primorski, the restaurant grew from a capacity of 75 to 140 and now to 210.
Since Buba retired in early 2003, his two sons, Jacob and Michael, try to make Primorski keep in its tradition of being the "oldest and finest Russian Restaurant in New York", with new entertainment, and variety of new Georgian and Russian dishes.
In mid 2005, the torch had been passed on again when Primorski was sold. Now new owners Sasha, Fima, and Ruben will continue on in the tradition of Primorski.
