At Pancho Villa, we pride ourselves on creating fresh, authentic Mexican dishes with a modern twist. In Mexico, food preparation can take all day, so to be a chef at Pancho Villa is no 'paseo in the parque'- our chefs are in at the crack of dawn, mashing avocados for guacamole, chopping chillies ' we use over twelve different chillies in our dishes - and squeezing loads of fresh Mexican limes for making Margaritas.
