Introduction
Giovanni's Pizza Stand got its start a few years back working out of one of the 1st pizza trailers in Austin's ever expanding food trailer market. Owner & chef Julio Rangel could then be seen working out of the old dingy trailer in 100 degree plus heat most every night on an empty street corner (and that's 100 degrees plus before factoring in the gas deck ovens he cooked the pizzas in). These days Giovanni's remains working on the same corner in South Austin (Barton Skyway & South Lamar) only now out of the comfort of a pretty nice gas station and convenience store.
Since Giovanni's doesn't have the overhead and expenses of running a full blown pizzeria and/or restaurant he is able to keep his prices extremely fair. That is likely one of the reasons he has carved out a local niche as a go to pizza stop for locals. The likely other reason is that his pizzas are good. Much better than you would typically expect from a gas station or trailer. But since the owner honed his chops working at a few local Italian places before branching out on his own, you can know that you are getting a pie from a pizza guy...not just a business guy.
From a pizza standpoint Giovanni's is certainly not trying to reinvent the wheel. He makes thin crust pies and tops them with above average ingredients. I found that his cheese and pep offering was pretty good on this night without being awe-inspiring though. The sauce was very clean but very sparse in quantity. Average tasting pepperoni's. My wife opted instead for the margerita pizza. It was top notch. One of the better 'nearly'-politan margherita's in town. Fresh sliced tomatoes, the right amount of garlic and basil and an honest supply of mozzarella. Very tasty. In a competition, the margherita wins hands down at Giovanni's.
On the downside the regular pizza at Giovanni's lacked texture and was kind of dried out (partially skim mozz?). However his pizza competition is poor in the general vicinity filled with average local places and horrible chain places. I was surprised to see a skilled chef running his homemade dough through a dough-sheeter, but that's exactly what he does. Kind of disappointing really. I'm sure he has his reasons (time, speed, consistency, etc), but it does take away from the overall craft of the pizzas he puts out.
Our recommendation is to drop in and grab a margherita pizza and a couple of bottles of wine (while you are gassing up) and head back to the house for a night of wine and pizza induced good times
