Introduction
Jorge Saldana, owner, chef, and farmer behind Berkeley's Cancun, and San Francisco's, Tlaloc and Chilayo, can still picture his mother in his family's kitchen cooking for him and his nine siblings. Her passion for flavor and freshness can be found in each recipe he shares with his customers along with his own love for flavor, sharing, and his unwavering enthusiasm for growing his own organic produce. Jorge is originally from the Guadalajara region of Jalisco, a central Pacific state of Mexico where the traditional cooking boasts the richest harmony of flavors. The spirit of Jaliscan food, incorporated with the best elements of the surrounding states, makes the fare from this part of the world vey special.
It wasn't until Jorge settled in Berkeley that he truly knew the treasure of cuisine he had left behind in Mexico, and moreover in his mother's kitchen. He dedicated many meals to perfecting the taste of his mother's home cooked dishes that he now serves daily in his 3 restaurants. Knowing wholeheartedly that the most beautiful flavor in any dish comes from the love the food is made with, Jorge cooks with passion and love and the freshest ingredients delivered from his farm, by his own hands.
Jorge's philosophy is simple and consistent: The best flavor comes from the freshness and quality of the sum of ingredients. Freshness comes from the dedication to carefully and thoughtfully selecting your ingredients. The Sonoma based, Saldana Farms grows all organic; peppers, potatoes, onions, carrots, corn, cilantro, garlic, tomatoes, tomatillos, squash, lettuce, cucumbers, blueberries, strawberries, cantaloupes, watermelons, peaches, and cactus. He raises his own chickens and uses only the freshest eggs as well. He searched long and hard for the perfect place to grow organic produce and farm all his ingredients. The land is located in the heart of a protected expanse where no pesticides can be used or other harmful chemicals can be spread.
Jorge believes in the humanity of cooking and feeding. The health of our environment as well as our own health as individuals relies on the daily choices we make around consumption. Eating organic food is one way of participating in the greater health of both the individual and everything else surrounding. Jorge is proud to contribute to this end, 'humans do not deserve to eat poison. We deserve to eat well, and be well, it is a choice we can make!â?
