What is raw cuisine?
Raw cuisine is food in its purest form. Often called "living food", this cuisine consists of fruits, vegetables, grains, legumes and nuts that have never been heated over 116F degrees, thus none of the vital enzymes or nutrients have been altered or destroyed.
How is raw food prepared without conventional cooking techniques?
Raw food can be sprouted, soaked, dehydrated, pureed, blended, even cultured. There are very complex dishes that mimic a familiar cooked dish, such as burgers and burritos and pizza, modified to fit the practice of raw food preparation. There are also simple dishes that feature the essence of raw food, such as vibrant salads, vegetable wraps and cold soups.

The idea is simple: As living creatures, we are best served by fueling our bodies with food that is, itself, alive. Eating raw, we permit a dynamic interaction between our bodies and our food.
