Introduction
Azul Tequila is a Mexican nest right in the heart of Texas. This is the home of the Blue Margarita and the famous Blue Mexican Martini.
It all begins in small town called TEXOPILLI (Tejupilco) which translated from the Aztec language means, (Dedo Gordo de el Pie), the big toe. This little town is surrounded by the states of Mexico, Michoacan, and Guerrero.
Cooking is to our mother nothing more than regular routine but to us is food from the gods. She learned to cook from her mother and grandmother, using recipes from the pre-Colombian era. Up to this date she still cooks with the same style.
This cooking made her open her first Fonda (small restaurant) in that small town, which became a successful business. Soon she decided to relocate together with our family to America, looking for the so-called American dream.
Dream that we also where looking for. We, the brothers started to work in different restaurants in Austin working in various positions. In 2001 we sought the opportunity of bringing our experience in the restaurant business and our mother's cooking to work.
Thinking that the time was right, and that the people of Austin was ready for the Interior Mexican Cuisine, we put our mothers recipes to work, and created a menu that brings to Austin a fascinating cuisine with a variety of flavors that remain virtually untouched by the Tex-Mex influence. Some examples are: our famous Cochinita Pibil, Chile Relleno en Crema, Mole de Olla, Albondigas en Chipotle, Pescado Yucateco, Pescado Empapelado and of course home made corn tortillas. While creating the menu of course we did not forget the Tex-Mex foods and brought a new style of Tex-Mex cuisine.
Azul Tequila takes you on a fascinating journey through the regions of South Central Mexico and introduces you to a well-blended variety of colors and flavors. We create our regional recipes by using the freshest and well-selected ingredients as dark chocolate, vanilla, corn, dry chiles, avocados, tomatoes, achiote, peanuts, pumpink seeds, dry bread, mango, papaya and coconut. All our mother's recipes are brought to you at Azul Tequila from our heart to your mouth and all this by the new generation, the Azul Tequila Family.
