But, instead of using mushy tofu, Veggie Grill dishes are made with savory meat substitutes that mimic the texture and taste of favorite comfort foods, say the owners. With aspirations to take their menu mainstream, the partners, along with Orange County restaurateur Ray White, will open their first eatery Nov. 13 at the University Center in Irvine.
