Introduction
It all began in the kitchen when Roger Diaz was growing up, he was taught to cook by his grandmother and mother, who both believed the secret was to use the freshest ingredients and maintain the integrity of the food. Roger knew he always wanted his own restaurant. He was committed to continuing the family tradition of creating healthy foods.
So when you see Roger today, just say "Hola." He will be busy carrying on the three generations of the Diaz credo: Making flavorful food that is good and good for you. We are pleased to share these family dishes with you, and hope you enjoy them as much as we do.
100% blue agave. Produced in the town of Tequila, Jalisco (lowland). One of few types of tequila that are certified organic. Only uses mature organic agaves that are then slow baked in clay ovens, then the agave fibers themselves are fermented then distilled, rather than just the juice from baking-resulting in a richer more robust flavor than the majority of silver tequilas.
In addition to the tequila being itself organic they try to keep as small of a carbon footprint as possible, bottles are lightweight and all labels are made from recycled materials. IXA also plants a tree for each bottle sold.
Nose-floral, citrus and wet cement.
Taste-earthy, citrus and pronounced baked agave.
Finish-smooth, buttery and rich. Very soft finish.
