At Truluck's, we are so committed to fresh Florida Stone Crab that we own our fisheries and we work exclusively with a group of dedicated crabbing professionals on the Isle of Capri just outside of Naples, Florida.
Each day our boats go out into the turquoise waters of the gulf of Mexico, set their traps, and catch the crab. They then return to our fisheries where we cook the crab, size them and pack them in ice. Then they're off to the airport and to our restaurants. From our traps to your table in less than 24 hours.
We will NEVER serve frozen Florida Stone Crab. We offer it only at the height of freshness during season.
We believe that as responsible restaurateurs, we must be champions in the sustainable seafood movement. That's why Truluck's will never serve endangered, overfished species and we follow all Ocean Conservancy guidelines.
Environmental stewardship and sustainability drive all aspects of Truluck's operations. For this reason, we purchased our own crab fisheries to ensure that all crab is caught and prepared safely and humanely. We respect the seasonal cycles of marine life. We do not serve seafood out of season. This protects our aquaculture and ensures better-tasting, higher-quality food.
Truluck's serves 100% antibiotic- and hormone-free All Natural beef, pork and lamb. We only work with farmers that raise livestock traditionally and humanely, and feed all animals only the highest-quality 100% vegetarian feeds. All animals are raised exclusively on environmentally sustainable U.S. family-owned farms and ranches.
