Introduction
I opened in 1990, two years later we had a Michelin and Egon Ronay Star, a year later 3 Rosettes from AA and a fourth added in 1994, along with two Stars from Michelin to add to the Egon Ronay Chef of the Year - it all happened so fast.
Along that path my friend, Reg Johnson and I developed the Goosnargh chickens and ducks, black pudding became a restaurant dish after I had cooked it for champagne owners in France, and Lancashire cheese became fashionable.
By 1997 I had written my first of two books, Rhubarb and Blackpudding (with Matthew Fort) celebrating British food, growth and suppliers which sold 30,000 copies.
Today my Head Chef, Hywel Griffith, cooks with the same philosophy - cooking wonderful lamb, beef and scallops.
My restaurant has 60 covers, a Private Dining Room for 12 covers, a Cookery School and runs a number of special events.
