Introduction
We believe this is what has kept us trading in Teddington for over 40 years. We pride ourselves on our family background coming from Northern Italy (Lake Como, Lombardy), this is where the passion for great food began. Having been bought up growing our own seasonal vegetables and farming our own goats, rabbits and chickens, we learnt from an early age the essence of great home grown ingredients.
Family and friends are of the utmost importance to us and enjoying meals together is a big part of Italian culture. We bring this warm and relaxed atmosphere to Shambles whether you are dining in the restaurant or al fresco in the garden.
Our bread is made using traditional Italian recipes and methods. Italians use a natural starter or “biga†made with white and whole-wheat flour, sea salt and water. The biga enables the ingredients to rely on naturally occurring yeast spores rather than commercial yeast. Hence its deep flavours and rich crust.
Our fresh pasta is made every day using imported Italian eggs, flour and extra virgin olive oil to retain that traditional flavour that ‘Nonna’ (Grandma) would create. We roll all our fresh pasta by hand rather than using any electrical equipment, we never pre-cook it and by doing this we can retain an al dente, absorbent and tasty pasta.
Our food, understanding the origin of our ingredients is really important to us and in order to do it justice we always strive to use local suppliers whenever possible and source sustainable products. During the Spring/Summer months we also grow some of our own vegetables/fruits/herbs in our kitchen garden (which is available for you to visit), providing freshly picked foods on your plate that very same morning, afternoon or evening.
