To us a chop house isn't just a restaurant or a pub. Or even a gastro-pub (though it's probably fair to say that chop houses were gastro pubs centuries before the expression was coined by a marketing whiz kid). A chop house is a meeting place with much more than just beers to drink.
Like the coffee house, the alehouse, the boarding house & others, the chophouse is a British institution dating back to the origins of modern commercial trading in the sixteenth & seventeenth centuries. Chop houses were originally places where businessmen dined & conducted their affairs over hearty plates of traditionally cooked meats, frequently grilled & washed them down with well-kept local beers or fine wines.
Not much change there then.
