Introduction
The Idea behind Rustic kitchen is to cook and to teach people how to cook seasonal, sustainable, locally sourced produce, where is possible. Applying modern cooking techniques to classic recipes, the aim is to create healthy food with a taste.
I am an Italian chef, trained in Italy, in Michelin Star Restaurants, I moved to Australia in 2008 and I've worked for some of the most prestigious Italian Restaurants in Sydney (Otto, Pendolino, Fratelli Paradiso, Vini).
The focus is on Italian Cuisine, considering my background, but i have also worked for excellent catering companies (Pearl Catering, Mason Rose), and Hotels (Four Season, Q station) for the last 2 years, which gave me a good understanding of Modern Australian food.
