Introduction
Patrick Guilbaud's family is from Cognac but in 1974 he moved to England and opened his first restaurant in 1976. In 1981 he decided to move to Ireland to custom build his restaurant. The restaurant was designed by architect Arthur Gibney. The brief given to him was to design a restaurant that was contemporary and spacious which would stand the test of time.
Since then we have moved with the times. My philosophy is to bring a level of food, wine, service, ambiance and atmosphere which should match the expectation of our customers.
Our reputation is high but we will always try to be as good as we can.

For all reservations we require a credit card number to secure the booking. We do not process a deposit however should you need to cancel your reservation or reduce the numbers in your party you must give us at least 36 hours notice. Failure to do this will incur a cancellation fee of â?¬50.00 per person cancelled. All reservations must be confirmed in the week prior to the booking.
We will endeavour to contact you, however should we be unable to reach you please call us to confirm your reservation. Restaurant Patrick Guilbaud reserves the right to cancel unconfirmed reservations at its discretion.
To cancel or change a reservation please send an email to restaurantpatrickguilbaud@eircom.net or telephone the restaurant.
We accept reservations as far as four calendar months in advance.

Private Dining
The restaurant has a separate luxurious room for private parties catering for up to 30 people seated. However, for larger parties our main dining room can seat up to 80 people. We can cater for all kinds of events from fashion shows to wine tastings.
Outside Catering:
Restaurant Patrick Guilbaud will provide menus for parties enabling patrons to offer their guests quality cuisine with or without service in the location of their choice. We cater for private house parties, weddings or business conferences.
Terrace:
The terrace is situated beside the main dining room and the 16th century garden of the Merrion Hotel. The heated terrace is partly covered by a glass roof and has a wonderful atmospheric gas fire. The terrace is not used for dining yet but can be used for cocktail parties, wine tastings, aperitif and an end of evening coffee, wine, digestif and cigar.
Since 1981 Restaurant Patrick Guilbaud has been collecting wine from all over the world. Keeping the wine in the right condition for serving at its best is the duty and the skill of our sommeliers. We designed our glassware and decanters to suit the development of the wine.
For some people the business of finding the right wine to go with a particular dish is something approaching an exact science.
Surprise and excitement is what you get when you come close to the perfect match between food and wine.
