Introduction
We are a family owned and operated Vietnamese cuisine restaurant. Our menu is curated from nothing but home cooked meals that Nancy has made for family dinners for the last 20 years. This means that not only is every item made fresh to order, but every item has over 20 years of time, love, and care put into it.
FRESH PHO, MODERN DESIGN
We are healthy, vegetarian friendly, and family friendly. Additionally, since we mainly use rice and don’t have wheat on our menu, our entire food selection is GLUTEN FREE!
Our bar is open and continuously expanding! Right now we have a wonderful selection of beer and wine available, with cocktails and spirits coming soon!
WE CAN CATER! WE CAN HOST LARGE PARTIES!

ho by Night is a new Vietnamese Restaurant that opened in Lone Tree, CO on July 12th, 2019.
We are family owned, and family operated.
Pho by Night was created from the minds of Tony Dinh and Thuan Nguyen. They envisioned a restaurant with a modern design combined with the fresh flavor from home. Together, with their son Johnny Dinh and daughter Tammy Dinh, the Dinh family hopes you will come to enjoy Vietnamese cuisine as it’s meant to be, with friends and family. Nancy (Mom) and Tony Dinh (Dad) are the business owners while the son (Johnny Dinh) works as the restaurant manager. Mom works in the back as the head chef while Dad does everything and anything needed.
The Pho by Night difference
Mom’s Magic Touch
We curated the menu to be nothing but home cooked meals my mom has cooked at the home for dinner for over 20 years. As a result, everything on the menu is not only made fresh, but each dish has been refined over 20 years to be distinct, unique, and whole heartedly authentic. Additionally, because my mom is in the kitchen as the head chef, you are literally getting mom’s home cooking for your meal. Nancy is incredibly detail oriented and caring. She puts her heart and love into every dish she makes and as a family, we are excited for you to experience it as well.
We make it fresh!
Pho by Night is committed to making every dish a meal we would be personally proud to serve any customer. That means adhering to our own high standards for freshness and presentation. Outside of making our meals when they’re ordered instead of microwaving premade meals, did you know we make almost everything in house? Here’s a list of things that stand out:
We make the classic Iced Vietnamese Coffee fresh every morning using a slow roast method! Each cup of coffee on average takes 30 minutes to slow drip and as a result, the coffee comes out both strong and sweet. It’s like a 1-2 pop in the face that leaves you feeling alive!
We make our own Boba pearls fresh every morning
We make our own fresh tea including the fan favorite Artichoke Tea and Hot Ginger Tea
We don’t use a deep fryer at Pho by Night. Anything that requires a frying process such as our eggrolls or wings are fried in a pan fry with vegetable oil. The result is a much more healthier process and a much more crispier process!
We make our own sauces in house including our: sweetened fish sauce, chili oil, spicy soy sauce, “House Wing Sauceâ€, and “Hot Wing Sauceâ€
The Presentation
Outside of being an amazing chef, Nancy Dinh is also an interior designer. She designed the entire restaurant layout and the whole family installed everything themselves. That’s right! Everything you can see from: the floor, to the chairs, to the tables, to the wall paneling, and light fixtures were all installed by the Dinh family. Johnny and his sister Tammy, take particular pride in installing the “Twin Star Crystal Chandelier†which took a whooping 18 meticulous hours to install. All this to say we have put our work ethic on display and take pride in acknowledging this; Pho by Night is a family restaurant that presents itself as a high quality, relaxing retreat where anybody (regardless of age, race, or gender) can come in after a long day and enjoy themselves with some delicious food.
Customer Service
It is our belief that outside of great food, great customer service is the pillar of a great restaurant. With that in mind, our ambition is to provide each customer with an amazing experience by answering any and all questions, being attentive to the customer, and accommodating to the customer’s dietary needs (vegetarian, vegan, gluten-free).
