Introduction
In the Old French still in use in Provence, a mas is a stone farm house or small farming estate. Uniquely, all of the products that nourish a mas are grown on the mas. We feel that this is a very sensible way for humans to live on the earth. There is very little waste on an estate such as this and prosperity is measured by having enough to eat. Though we are located in the heart of Greenwich Village, we seek out seasonal ingredients from small organic sustainable farming operations in the countryside surrounding New York City, using this circle of gardens, some of the finest farmland in the world, to form our "estate".
