Introduction
"Gomen-Kudasai" is a greeting. It is the first thing a visitor says when arriving at someone's home or shop. The original meaning was, "May I have your permission to come into your house/shop?" Today it can be translated as "May I come in? Is there anybody here?" It is very characteristic of Japanese culture.
Our "Gomen-Kudasai" means, "May I come in and have some noodles?"
We replaced the symbol for "permission" with the symbol for "noodles" to give the word double meaning. Because both symbols are pronounced the same, we are making a play on words.
Our noodles are served with a special Dashi* which requires a very slow process and is made from scratch.
Our NY style Japanese home cooking is another slow food made with a lot of organic and locally-grown ingredients. Our sushi is a rare treat for the people who have a deep understanding of the way of sushi.
