Introduction
The Gecko Mama (Sarah) was born in Chihuahua Mexico and learned to cook many of her dishes in Guanajuato Mexico. The different regions in Mexico and the different dishes that are distinctive to each region have always fascinated Sarah. Our Marisco dishes are a tribute to the various seaport towns in Mexico especially the Puerta Vallarta area. Our Mole', is Guanajuato style and is not as sweet as the style of Mole'. The Chile Relleno is a recipe that Sarah learned from her many trips to Mexico learning the traditional methods of cooking dishes from native cooks that were famous locally for their family recipe.
Sarah for many years has worked in the San Jose area as a Paralegal and gained a family reputation as a gourmet cook. Sarah was influenced and is a student of the Julia Child method of cooking. She has worked with a professional French chef that ran a locally famous French restaurant and has incorporated French sauces at times in her specials of the day. Sarah's flan is made with a Gran Marnier sauce and has been influenced by her love of French sauces. Sarah also loves Italian food and has incorporated traditional Italian recipes in her pasta Mojo de Ajo and other Italian/Mex dishes.
The Gecko Papa (Bob) grew up eating New Mexican dishes that his mother learned from her mother growing up in New Mexico. The New Mexico enchiladas and Chile Verde dishes are based upon traditional New Mexico recipes. The Mexican Lasagna plate is Sarah's fusion of New Mexican enchiladas and the traditional lasagna without the pasta. Bob loves to BBQ and the BBQ oysters are a tribute to a Jaramillo family recipe improved by Sarah and perfected by her son Juan. Bob has also spent considerable time devoted to the study of the fruit of the Agave plant and has spent numerous years evaluating the various nuance's of Anejo, Reposado and Plata tequila's and is willing to share that experience with our bar patrons.
Bob and Sarah have for numerous years loved wine with Sarah's French and Italian dishes and more recently discovered the way good wine enhances the Gecko's Mexican dishes. One of the wonderful experience's of owning a restaurant is the opportunity to meet people in the food and wine industry. We recently had Maria Robledo and her daughter Vanessa of the Robledo Family Winery (Napa/Carneros wine region) match their wine with our Gecko Mexican dishes. Our new wine list proudly lists numerous Robledo wines and our suggestions in matching Robledo wines to our menu.
