Introduction
Ellsworth Cooperative Creamery, based in Ellsworth, Wisconsin, is famous for their all natural white cheddar cheese curds (also referred to as squeaky cheese). They're so famous in fact that they are known as the Cheese Curd Capital of Wisconsin. Their Comstock, Wisconsin facility manufacturers over 80 varieties of small-batch artisan cheeses including their award winning Muenster, Wisconsin Brick and Hot Pepper Jack varieties.
